Baked Sliced Potato Parcels

Serves     4

25 minutes directly on grill, or 45 minutes on the upper rack

Ingredients
4 large Squares of double thickness foil
Olive Oil
4 Potatoes, skin on with one inch deep horizontal slices
Equal parts Seasoning of Salt, Fresh Pepper, Paprika, Garlic Salt and Thyme
2 strips Bacon, uncooked and cut into small pieces (optional)
1 large Onion, peeled and cut-up
1/4 cup Butter
1 cup Grated Cheddar Cheese







Indoor Preparation
Lightly grease the foil with olive oil.
Place a sliced potato on each square and season.
Place bacon bits and onion in the potato slices. Dot with butter.
Wrap the potatoes up carefully into parcels.


Outdoor Preparation
Grill on medium-high for 25 minutes directly on the grill, or for 45 minutes on the upper rack.
Turn parcels after 15 minutes, being careful not to tear the foil.
Just before serving, open foil and top potatoes with grated cheese. For added flavor, dot with low-fat sour cream just before eating.
